HCE modernises kitchen of prestigious building in centre of Westminster, home of the ICE

One Great George Street, home of the Institution of Civil Engineers (ICE) is a conference centre, event and wedding venue that originally opened in 1912. Located in central London, close to the Houses of Parliament and Westminster Abbey, it is set in a magnificent Grade II listed, four-domed, Edwardian building, designed in the Belle Époque style.

Open seven days a week, the catering team can cater for to up to 500 people at any one time, throughout the 21 function rooms, which host everything from film sets to conferences and concerts. After last being refurbished over 20 years ago, the kitchen was no longer meeting the changing culinary requirements of the venue as David Wilkinson, Executive Chef explains:

‘The business had outgrown the old kitchen. We didn’t have enough storage, fridge or freezer space, and we needed more workstations. We had a hot plate that wasn’t really being used and the HCE design team worked alongside us to help realise the potential of our kitchen space and how it would best service the requirements of the business.’

The other key element of the upgrade was the need to move to a more sustainable operation as Phillip Ackers, Head of Building Services explains:

‘Crucially, we also wanted to take the opportunity to move from gas to induction, which is a significant part of ICE’s commitment to achieving carbon net zero by 2030. This meant relooking at the appliances within the kitchen and upgrading them to the latest electric equivalents.”

Whilst initially the plan was centred around an upgrade to the cooksuite, due to the inefficiency of the flow and operation of the kitchen, this project became a full turnkey solution as Phil explains:

‘After being briefed, HCE came up with the idea of not just replacing the central cooksuite but relooking at the flow and layout of the kitchen. The ideas they had were truly inspiring. They created a concept that gave us far greater storage and cold storage space which was designed to significantly reduce deliveries into the building. Being so close to Parliament Square, the more cold storage we have onsite, means the more we are able to store.’

With other construction work going on simultaneously within the building, and a tight construction phase that only allowed HCE to operate when the building was closed, Phil was impressed by how HCE’s logistic skills came into play:

‘Deliveries had to come in within very tight timelines, either early in the morning or periods when we knew that there were no state visits or road closures. It was difficult but HCE minimised deliveries by collating equipment at their warehouse and all the deliveries arrived on time.’

In addition to the challenges faced by timings and restrictions, changing from gas to induction was a challenge within itself. HCE had to ensure there was enough power coming into the building to support the electricity needed by the new equipment. Despite these challenges, David is delighted by the result:

‘It’s been a very smooth transition from the old kitchen to the new. The new area out the back is something that’s worked even better than we expected. The freezers, which are probably four times the size of the old ones, are fabulous, and in the main kitchen we have much larger working spaces. Whilst before it was very cramped, the flow now is vastly improved. We’re now in a position where the kitchen is completely finished and we’re happy with the product.’

Phil adds:

The new kitchen is significantly more efficient. We no longer have any gas costs and the electric consumption isn’t anywhere near as high as we thought it might be. I would be very happy to recommend HCE as a partner for other business considering a similar kitchen upgrade. Having HCE manage the whole kitchen project just eased the logistics enormously.
